Tomato and Orange Soup
The Soup I choose to this
topic on is soup that I have never made or think of doing in culinary
journal. I did lots of research on soups
through google and cook books
I own and through books at
the library and indigo. After all of my research on different kinds of soups I
decided that the soup I choose was the Tomato and Orange Soup.
The story behind why I choose
this soup it really got my attention because I would never have thought about
putting Tomatoes and Orange together in soup before.
The recipe for this soup I
got it from the following website
Recipe Tomato and Orange Soup
INGREDIENTS
• 2 14.5 oz. cans diced tomatoes
• 6 tbsp. unsalted butter
• 1/2 medium onion diced
• 1 tsp salt
• 1/2 tsp cracked black pepper
• 1/4 tsp baking soda
• 1/4 tsp dried thyme
• 1 1/4 cups fresh orange juice
• 1/2 cup heavy cream
• Fresh basil to garnish
INSTRUCTIONS
1. Melt
butter in a large saucepan over medium heat. Add onion and sauté until
translucent. Add tomatoes and their juice, salt, pepper, baking soda and thyme.
Bring to a boil, reduce heat and simmer uncovered about 15 minutes or until
slightly thickened.
2. Using an immersion blender, process until smooth.
Alternatively, transfer contents to a blender and process until smooth.
3. With soup over low heat, stir orange juice and heavy cream.
Season to taste with salt and pepper.

My sensory evaluation of this
soup was that it was great balance of acidity from tomatoes and citrusy from
the oranges added
To soup. The right
terminology I would use was that it was Fresh fruity, Citrusy, and Green and
Grassy from fresh basil. The flavors were amazing balance all around.
I went to my cousin house to
have him and his wife try the soup with me. The following is there critique on
how the soup came out, and also my critique of soup as well.
First up is Aneta. Her first
response to the soup was that those flavors shouldn’t be mixed together. After she try it, she was impress with how
delicious, delightful, the soup was. The citrus of orange was good balance. The flavors of soup were amazing. I love Tomato soup and this was a new and
inventive take on a classic soup. She
wants me to make it again.
Here my cousin Rob critique
of the Tomato Orange soup. He like there was great flavor in soup, he was
impressing on how well citrusy flavor of orange emphasize the acidity of the
tomatoes. He said it savory, and croutons were toasted to perfection was great
idea to do as a garnish.
Here my critique of soup. It
was great balance of acidity and citrusy of orange was nice touch. With each
taste you got great nice touch of orange at back of your palate. The croutons were great touch of texture to
the soup and fresh basil was nice balance on the palate as well. Overall I was
impressing with the soup, but my first response was not sure how it was going to
work together. I would be making this soup again.
Some of the challenges that
were with this soup were trying to make sure I got right amount acidity and
citrusy to right amount so one didn’t over power the other flavors. But mostly
overall it was good the challenges were only small issues. I defiantly think I
did great job on the balance of tomatoes and oranges.
I would say it was great
success because my cousin and his wife were shock on how well tomatoes and
orange flavors work well together. I was also really impressed on how well this
soup was, I would make it again for sure.
I could away from making this
soup that both of these ingredients were great compliment to each other. I
didn’t think it would be as good as it was. I learn from doing this blog on
soup is that there is so many different variations of classic tomato soup.
I think the only thing I
would do different next time is use vegetables from my Nonna garden instead of
buying from a store, and use fresh basil from the garden as well.
I learn from doing this
recipe is that you can do so many different soups with tomato. I know now that
oranges are a great compliment to tomato soup.
There is a lot of ways to add different ingredients in cooking to make
foods complement each other really well can’t wait to keep trying different
combinations of ingredients in my future culinary journey going further in my
career. I would be a lot of research on different components of cooking soups
and etc. in my future in culinary world of cooking; you never stop learning in
this business.
