The Soup I choose to this topic on is soup that I have never made or think of doing in culinary journal.  I did lots of research on soups through google and cook books I own and through books at the library and indigo. After all of my research on different kinds of soups I decided that the soup I choose was the Tomato and Orange Soup. Blog #2 Sensory Evaluation Citation Milestones   The following dish I try for my sensory evaluation was Miso Glazed Cod I’m not sure if I need to do this step but the ingredients in the Dish were Milestones Miso Glazed Cod Pan seared wild Norwegian cod brushed red miso glazed, Jasmine rice Coconut lemon broth, served with spinach, kale, grape tomatoes and roasted red onions. This food that I had try had following taste creamy fruity, citrusy, Marine, sulphorous and Fresh fruit, was also sweet, savory and uname from Cod. The smell from this dish was aromatic. I didn’t sense any other smell The presentation was nice, considering I had it for takeout.    I vision in my mind how I would Have plated it if I was cooking it. Blog #4 Fermentation and Preserving The chosen raw food product that I decided on was baby Zucchini and Cherries. I decided on these 2 food products is because when I went to St. Jacobs Market I bought different kinds of fruits and produce, that is how I decided on what fruit and produce I wanted to use. The Market that I decided to take a journey to was the St. Jacobs Farmers Market. While I was exploring the market, there were a lot of choices of fruit to choose from there was around like 5 different vendors selling fruit. Most of the fruit that I explore at the first 4 vendors selling fruit were fruit I was really familiar with. I choose to go to this market because it’s most well-known market around Guelph it like 30 minute drive. I was really please with market layout while I was there exploring. I explore market for like an hour before I made my decision on what fruit I bought. When I got to last fruit vendor I saw while exploring the whole market I bought Cactus Pear and. My name is David Ceccato. In my third year of chef apprentice at the University of Guelph. There are so many topics on nutrition, but that one that has interest me probably has to be Diabetes. I have been around diabetes all of life, my nonno and mom have batter with diabetes most of their lives. I see all of what diabetes has done to my nonno and mom. Diabetes has two types 1 and 2. Diabetes type one is autoimmune disorder, which means it destroy the beta cells in the pancreas Result of type 1 diabetes is autoimmune disorder. With diabetes type 2 there are only couple reasons Why diabetes happens. 1st reason body can still produce insulin but it doesn’t work properly, this means the body is resistance of insulin The 2nd reason for type 2 is that insulin in pancreas can’t produce that good it decreases. My Name is David Ceccato, I am 35 years old. I'm in my third year of my apprenticeship, I’m working at the University of Guelph. I wanted to become a cook, then eventually a chef because when I was growing up as a Child seeing my Nonna cook for all of us every sunday lunch. She was amazing cook she made most of her food from scratch until she got little order and it was too much for her. It was best homemade Italian food. Combination of her amazing cooking and Co-op placement for cooking high school, I knew I wanted to be Hospitality Business.   My mentors are my Nonna, Chef Jeff Ryan and Chef Jad Crawford. These 3 mentors have taught me so much I could not thank them enough especially my Nonna she was my biggest mentor.
